Sweet Potato Pie
- 3 large eggs
- 1-1/4 cups sugar
- A dash of salt
- 1 teaspoon cinnamon
- 1/2 teaspoon powdered allspice
- 1 cup heavy cream
- 3 cups cooked mashed sweet potatoes (yams)
- 1 unbaked 10-inch pie shell
Beat eggs well; add sugar, salt and spices, and mix thoroughly. Add cream and stir. Add mashed sweet potatoes and mix thoroughly. Turn into pie shell and bake in preheated oven at 350 degrees Fahrenheit for one hour or until firm.
